Description
Fructosyl Amine-Oxygen Oxidoreductase, or fructosyl amino acid oxidase, is an amadoriase enzyme. It catalyzes the oxidative deglycation of Amadori products (glycated low molecular weight amino acids) to yield amino acids, glucosone and H2O2.
