Arabinan endo-1,5-alpha-L-arabinanase is an enzyme with system name 5-alpha-L-arabinan 5-alpha-L-arabinanohydrolase. This enzyme catalyses the following chemical reaction: Endohydrolysis of (1->5)-alpha-arabinofuranosidic linkages in (1->5)-arabinans. This enzyme is most active on linear 1,5-alpha-L-arabinan.

Specificity
Endohydrolysis of (1,5)-α-arabinofuranose linkages in (1,5)-α-arabinans. Acts more slowly on the (1,5)-α-linked arabinan backbone in branched arabinans than on linear arabinans.

One Unit of arabinanase activity is defined as the amount of enzyme required to release one μmole of arabinose reducing-sugar equivalents per minute from CM-linear 1,5-α-L-arabinan (6?mg/ml) in sodium acetate buffer (200 mM), pH 4.0 at 40°C.
Stability
> 2 years at 4°C. It is stable to repeated freeze/thaw cycles and to lyophilisation. At room temperature there is no loss of activity in 20 h in the pH range 3.0-7.0. the enzyme is stable at 50°C for several hours.
